One of the many signs of spring is seeing fiddleheads sprout from the earth. For centuries, fiddleheads have been a traditional spring delicacy in many American Indian dishes. Fiddleheads are the fronds that grow from the earth from ferns. Not all fiddleheads are edible, but the ostrich fern (Matteuccia struthiopteris) fiddleheads are.
